Mildred's & Blue Gill Mojito
Ingredients: 2-3 oz. rum, 1 lime, about 2 fluid oz. sugar, 2 large mint sprigs, top with soda water The science of the Mojito: For this cocktail, we talk about the proper technique for making a mojito and the science behind expressing the essential oils of the lime peel and the mint. The lime must be muddled dry with sugar, so that the sugar can act as an abrasive against the lime peel to release the essential oils in the lime peel. However, it is important not to muddle the mint leaves as muddling can break down the cell walls of the mint, which releases chlorophyll and can create a bitter or swampy flavor. Instead, smacking the mint on the palm of your hand and then putting it in the shaker creates a nice minty flavor. Mildred's & Blue Gill Old Fashioned Ingredients: 3 oz. whiskey, 1/2 oz. triple sec, 1/4 oz. cherry syrup, splash simple syrup, dash of bitters The science of the Old Fashioned: For this cocktail, we discuss the technique and difference between shaking and stirring a cocktail. Shaking aerates drinks and changes their texture, while stirring chills without introducing air, providing a silkier texture. We also discuss the heat capacity of the vessel used for stirring or shaking the cocktail and how the material of that vessel makes a difference in the overall chilling time of the drink.
